02 z440 fan Snopro tuning/carb problems

I have a 2002 z440 Sno Pro fan cooled that the choke plungers on the carbs seized up off. After a couple seasons of no choke i decided to replace the top side of the carb with two used, but in good condition, eBay carbs. This sled has always been really finicky but right now its really bad.

I cleans and switched over all the jets and gaskets and bowls from the old carb setup onto the eBay carbs and installed them on the sled. I got the sled running but one cylinder was running extremely lean, and one was running decent. I know I have the right main jets as Ive always used these. I decided they were unsynced and bought two vacuum gauges, I got them synced at around 4-5" on the vacuum gauge part of gauge( i think hg) and (i don't know if that's low). It wouldn't idle without a little throttle but would rev up fine. Still lean in one cylinder after I shut it off. It sat for 2 hours... Now for some reason, when I start it I have to be pinning the throttle to even get an idle otherwise when i pull it a few pops then it dies. Ive adjusted idle screw, throttle cable adjustment and choke adjustment. Please someone help me with what is wrong. I'm stumped..!!I dunno

Also, once it sits for a while It will start and idle fine. After 3-5 minutes of riding/running it will cut out. Really confusing on why one cylinder is leaning out. I also found a little piece of runner jammed up in my spark plug and pulled it out and it was for sure black round rubber gasket. I feel like I have too much fuel or something. Im really confused. Needle and seat have been checked 3 times this week. but water in the gas.. how do i check for that/ fix it...

assuming you have good compression on both cylinders, did you set the chokes properly. set your air screws at one turn out to start. and sync the carbs by turning the throttle stop screw out and then bottoming the slide in the carb by turning the adjuster. then tighten the adjuster until it just starts to move the slide then turn the throttle stop screw until it contacts the slide then turn it in 1 1/2 turns. do this on both carbs and also make sure the slides open completely and they should move at the same time. Like Mike said also make sure you have good gas. you can put some in a clear glass and look for water. it will be visible if you have some in the system. the float height should be about 22mm form the sealing surface of the carb not the gasket
