I am changing the oil in my diffs and not sure how full to fill them?

The front one shuld have a small screw below the big plug on the lafdt side that is the fill level plug, the rear should be filled to within one inch of the bottom of the plug on the right side. I believe the front takes 8 ounces and the rear takes like 9 ounces roughly.. You don't want to overfill them the seals will start leaking if you do

One easy, cheap way to check the level is to take an ordinary twist tie from a loaf of bread. Bend it 90 degrees about an 2 inches from the end. Then place this end in the fill hole on the diff. This should allow the tip to hit the bottom in the diff and you to be able to tell the level. It should be about halfway up.

Works pretty good and this way you can tell what the fluid looks like too to know if it has water in it or dirty.

I am also getting ready to change my diff fluid for the first time and i was going to go with Amsoil severe gear 75w 90 synthetic.Should i just drain the old and just put in the new or should i put something in to clean out the old oil before putting the new in.

Just drain out the old and let it drip for a few minutes to make sure it is all out, then refill, I don't see the need for an expensive synthetic oil when if you run in any amount of water it is a good thing to change it often anyway.. I use a cheap synthetic blend 75-90 for 4 bucks a qt. and change it every 500 miles or more if I have been in lots of water
